Ingredients
- 2 veggie burgers
- ¼ red cabbage, chopped
- 1 large mango diced (I used a package that I bought of pre-diced tropical fruit)
- 1 cup of Barbecue Sauce
- ½ an avocado
- 3 green onions diced for garnish
- fresh cilantro (optional)
- corn tortillas
- I also added diced carrots and some spinach to this recipe for added color and nutrition (totally optional)
Directions:
- Cook veggie burgers according to the directions on the box and set aside.
- Chop your red cabbage and set aside.
- Dice your mango if not pre-cut like mine. Set aside.
- Using a blender to mix your avocado and barbecue sauce together is what is suggested, though because I am lazy and don't like to clean the blender I just mixed them together by hand and that seemed to work just as well. ^_^
- Chop cilantro, green onions, and carrots and set aside as garnish.
- Once veggie burgers are done cooking/baking, break burgers into crumbles.
- Pull out your corn tortillas and top with burger crumbles, cabbage, spinach, mango, and BBQ sauce! Lastly add the cilantro, green onion, and carrot garnish and serve!
